Foods that are rich in vitamins, fatty acids, and antioxidants will help your skin stay clear, supple, and youthful on your wedding day and even as the years go by. Here are some really simple and delicious recipes to help you achieve that healthy glow and blemish-free skin on your big day.

Incorporate salmon and spinach

Salmon is rich in Vitamin A, B, and D, and omega-3 fatty acids, all of which help fight harmful free radicals in the body, moisturize the skin, and in the process improve skin texture. A healthy diet must also include spinach, which is high in Vitamins A, C and E.

In short, both make for clearer pores and less wrinkles. And we love that!

Salmon and Spinach Fettuccine

Ingredients

250 grams dry fettuccine pasta

1/4  cup butter

1 cup milk

1 tablespoon all-purpose flour

1 cup freshly grated Parmesan cheese

200 grams smoked salmon, chopped

1 cup chopped fresh spinach

2 tablespoons capers

1/4 cup chopped sun-dried tomatoes

1/2 cup chopped fresh oregano

Directions

1. Bring a large pot of lightly salted water to a boil. Add fettuccine, and cook for 11 to 13 minutes or until al dente; drain.

2. In a medium saucepan over medium heat, melt the butter, and blend with milk. Mix in the flour to thicken. Gradually stir in the Parmesan cheese until melted.

3. Crumble salmon into the butter mixture. Stir in the spinach, capers, sun-dried tomatoes, and oregano. Cook and stir about 3 minutes, until heated through. Serve over the cooked pasta.

Incorporate watermelon and sunflower seeds

Watermelon is an excellent antioxidant and just two cups gives you a day’s worth of Vitamins A and C. Sunflower seeds are also a powerful antioxidant, and contain Vitamin E and linoleic acid. Both substances protect the skin from sun damage.

Watermelon Summer Salad

Ingredients

1/2 small watermelon, cut into bite-sized chunks

100 grams crumbled feta cheese

1/2 cup salted sunflower seeds

Directions

Combine the watermelon, feta cheese, and sunflower kernels in a large bowl; toss. Chill for two hours or more. Serve cold.

Incorporate sweet potatoes and red peppers

Vitamin A, in the form of carotenoids, prevents the breakdown of collagen and helps maintain the skin’s elasticity. A serving of red peppers is chock-full of Vitamin C, which we’ve all heard is important to make collagen. Collagen is what keeps skin firm, dewy, and resilient.

Sweet Potatoes with Sausage and Peppers

Ingredients

2 large sweet potatoes, peeled and diced

1 tablespoon vegetable oil

250 grams bulk Italian sausage

2 red bell peppers, chopped

1 onion, chopped

2 cloves garlic, minced

200 grams chunky salsa

1 teaspoon ground cumin

salt and pepper to taste

Directions

1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, 12 to 15 minutes. Drain and set aside.

2. Heat oil in a large skillet over medium heat. Crumble sausage into skillet and cook, stirring frequently, until browned and no longer pink, about 7 minutes. Remove sausage with slotted spoon and drain on paper towels.

3. Pour off all but 1 tablespoon oil from the skillet. Heat oil over medium heat and add bell peppers, onion and garlic and cook until softened, about 7 minutes.

4. Add to the skillet the potatoes, sausage, salsa and cumin. Stir and cook about 5 minutes to heat through and blend flavors. Season with salt and pepper.
