Recently we’ve been going crazy over macaroons during tea time, because they’re just the cutest little treats. So when we spotted these macaroon pops from Bakerella inspired by Tartlette we had to write about them.

We think they’re the perfect DIY wedding favors, because they can be made in so many different colours and just look so irresistible.

Below are the ingredients and instructions.

Ingredients for the shells

3 egg whites

2 Tb to ¼ cup granulated sugar

1.5 cups + 2 Tb powdered sugar

¾ cup of almonds slivered, blanched, sliced, whichever preferred

Instructions

1. Prep the eggs 48 hours in advance. Separate the whites from the yolks and place the whites in a bowl. Leave at room temperature, uncovered, or loosely covered with a towel for at least 24 hours.

2. Prepare the macaroons. Put powdered sugar and almonds in a food processor and mix till the nuts are finely ground.

3. Whip the egg whites into foam and gradually add sugar until it turns into a glossy meringue.

4. Add the nuts and powdered sugar into the meringue.

5. Fill pastry bag fitted with a plain tip (Ateco #807 or #809) with batter.

6. Make 1 ½ in shapes on a silpat cover baking sheet. Then let the shell sit for 30 minutes to an hour.

7. Preheat oven to 280F. Preheat to 300f if using regular electric or gas oven. Bake 18-20 minutes. Let cool.

8. Prepare the ganache. Use ½ cup of heavy cream and 8 oz semi-sweet chocolate morsels. Heat the cream in a pot. Put morsels in a bowl and pour the cream over. Stir until smooth and let cool.

9. Spoon ganache onto a macaroon, place stick on the top of ganache halfway to center (optional), and sandwich it with another cookie. Remember to let dry completely.

10. Don’t forget to tie ribbons onto the sticks (optional).
